Ingredients
4 pitas (15 g carbs or less)
oil sprayer
½ tsp. Morton lite salt, divided
½ ground pepper, divided
¾ c. tomatoes, diced.
1 ½ tsp. butter
1 c. green bell pepper, chopped
1 c. mushrooms, thinly sliced
¼ c. green onion, chopped
1 ½ tsp. thyme
1 tsp. basil
1 tsp. oregano
2 cloves garlic, thinly sliced
Directions
Arrange pitas on a baking sheet.
Spray lightly with oil sprayer and sprinkle with half of salt and pepper.
Arrange tomatoes on bread.
Melt butter in skillet over medium heat.
Add mushrooms and let cook for 3-5 minutes or until golden brown on bottom.
Add green pepper, green onions, thyme, oregano, basil and garlic.
Season with remaining salt and pepper and cook for 3-5 minutes or until garlic is fragrant.
Divide vegetable mixture between pitas.
Bake pitas in preheated oven for 8-10 minutes or until edges of pita are golden brown and crisp.
Remove from oven and cut into slices.
