Fall Season Foodie Faves

Fall Season Foodie Faves

Pumpkin Spice Slim-Repair® Muffin

There’s just something so special about the smell of pumpkin spice on a cool Fall day. This muffin is a healthy, fluffy and decadent way to start the day. We love to make them in batches to keep for when we need something easy to enjoy on-the-go.

1 serving | per serving: 1⁄2 Protein, 1 Starch and 1 Slim-Repair or SuperGenic Thermo-Snack

1 egg, beaten

1 teaspoon pumpkin pie spice mix

1/4 cup of pumpkin puree

½ teaspoon almond extract

1 tablespoon water

2 scoops Vanilla Slim-Repair Detox Shake

Mix ingredients and bake at 350 degrees F. for 10–15 minutes, until done. May microwave in glass bowl or coffee mug for 1:20 – 1:30 minutes on high.

Creole Crusted Salmon

My mouth is already watering thinking about this amazing salmon recipe. It’s elegant, spicy and your family will think it takes much longer than it does to make.

1 serving | per serving: 1 Protein, 1 Fat

1 tablespoon salt-free Old Bay seasoning (see recipe below)

⅓ teaspoon garlic powder

5 ounces fresh or frozen Atlantic salmon

1 teaspoon butter

⅓ teaspoon red pepper flakes

1 lemon, sliced

Preheat the oven to 400 degrees F.  Mix together salt-free Old Bay Seasoning (see recipe below) and garlic. Sprinkle generously over both sides of the salmon. Press spices firmly into salmon and allow to rest. In an oven-safe pan, melt butter on medium-high heat. Mix in red pepper flakes and cook for 30 seconds. Place salmon skin side down in the pan and allow to sear for 3 minutes until a crust forms on that side. Remove from heat, place lemon slices on top of salmon and cover with tin foil. Place in the heated oven and allow to bake for an additional 4-5 minutes or to your desired texture. Remove from the oven and serve. Yum!

Salt-Free Old Bay Seasoning

McCormick® Old Bay seasoning instantly elevates the flavor of any seafood dish and is a mainstay in Cajun cooking. The only issue is, the salt. With this salt-free recipe, you get all of the flavor with none of the sodium overload.

1 teaspoon celery seed

1/2 teaspoon dry mustard

1 teaspoon black pepper

1/4 teaspoon nutmeg

⅛ teaspoon cinnamon

⅛ teaspoon ground ginger

½ teaspoon cayenne pepper

Mix all ingredients together in an airtight container. Use to flavor your favorite dishes.
